Jollof Rice Recipe

Jollof rice, featured in our film Season To Taste, is a delicious West African cuisine made from rice, tomatoes, onions, peppers, and other seasonings

Ingredients

  • 4 cups of long grain white rice

  • 35g Tomato paste 

  • 4g Habanero (Habanero to taste)

  • 7.5g Ginger

  • 4oz red onions (for frying)

  • 91g Vegetable Oil

  • 3 cloves Garlic

  • 1.25oz red Onion (for blending with Ginger, Garlic, Red Bell Peppers)

  • 4oz Red Bell Pepper 

  • 8 oz Chicken Stock

  • 1-2 Chicken Bouillon cubes 

  • Reserve salt to taste towards end of cooking process

Step 1: Prepare the Tomato Sauce

  1. Puree 1.25oz Red Onion, 4g Habanero, 3 cloves of garlic, 7.5g ginger, 4oz bell peppers, about 1oz of water in blender (set aside)

  2. Heat Vegetable Oil (Do not let oil smoke)

  3. Add 4 oz of Red Onions to oil with 35g of Tomato paste 

  4. Put in pot and stir constantly.  When the Onions caramelize and pot contents are darker, add the contents of the blender

  5. Add the pureed items in blender to the pot

  6. Add 8oz Chicken Stock

  7. Add 1 Bay Leaves

  8. Add .2oz Black Pepper

  9. 1/2 teaspoon Curry powder 

  10. Add 1 cube of Bouillon cube 

  11. Keep stirring and do not let burn 

  12. The tomato sauce is done when the oil separates to the top

Step 2: Prepare the Jollof Rice

  1. Bring 4 cups of Long Grain, White Rice to a boil

  2. Using a sieve, drain the cooked rice from water 

  3. In an oven-safe cookware, put the drained rice and incorporate the tomato sauce until the rice is evenly coated in sauce

  4. Place the rice in the oven for 45 minutes at 350 degrees. The Jollof Rice is ready when the Tomato sauce is fully absorbed by the rice.

Yield is 8 cups of Jollof to feed 8 adults as a main dish
